What is gluten?
Gluten is a protein combination found in some cereals, barley, rye and wheat. It makes dough elastic and enables it to rise by trapping gas.
Why are you gluten free and dairy free?
There is a large population with food allergies, gluten intolerance, celiac disease and those who are mindful of how their diet impacts their health and well being today. With the growing dialogue as to the benefits of a wheat free diet we seek to provide the best tasting allergy free baked goods to service these concerns.
What gluten free flours do you use?
Gluuteny has incorporated a blend of non-gluten customized products such as rice flour, tapioca, potato and cornstarches along with xanthan gum.
What products do you use instead of dairy?
Gluuteny uses almond milk, rice milk, Daiya brand imitation cheese, Tofutti brand imitation cream cheese, vegetable based shortening and vegetable oil spread.
What kind of oil do you use?
Gluuteny uses canola oil and vegetable oil spread in most of our products though some of our savory products use olive oil.
What kind of sweeteners do you use?
We used cane sugar in most of our products though we also have no sugar added products by substituting agave nectar, which are noted on our menu.
Dairy Free - Does that mean that everything Gluuteny makes is vegan?
No, but we do offer a variety of vegan products. Some of our products contain eggs and our bakery staff, our menu or the website will clearly note the difference.
What products are vegan?
All our Breads & Savories (loaves, rolls and pizza products), all our Donuts, all our Tea Cookies (Lemon, Pistachio and Mexican Wedding, and a number of our Cupcakes (Cappuccino, Chocolate, Chocolate Hostess, Toasted Almond and Tropical Temptation) are vegan and contain no animal based ingredients
What products are soy free?
All our Breads & Savories (loaves, rolls and pizza products), all our Donuts, the Pumpkin Pistachio and Triple Berry Muffin, and Pumpkin Loaf
What products contain nuts?
The Deluxe Brownie, Brownie Bites, Chocolate Walnut Cookie, Cranberry Walnut Cookie, Mexican Wedding Tea Cookie, Pistachio Tea Cookie, Toasted Almond Cupcake, Cinnamon Swirl and Pumpkin Pistachio Muffins and Cinnamon Swirl Loaf all contain nuts. The Chocolate Vanilla Swirl Loaf, Lemon Loaf and Vanilla Pound Cake are made with almond milk.
Do any products contain peanuts?
Yes, some of our products contain peanut butter.
How do you color your frosting?
Gluuteny uses food colorings which contain no synthetic dyes and are vegan, nut free, gluten free and dairy free.

We ship a large variety of our products nationwide which you can view on our website at www.gluuteny.com.
What products can be shipped?
We ship all 14 Gluuteny mixes, muffins, quick breads, brownies, and most cookies (NOT decorated sugar cookies).
Why don't you ship the other products?
We use no preservatives in our baking and some products like cupcakes do not travel well. We only ship those products that will arrive fresh and in tack. For these reasons we do NOT ship bread, rolls, cupcakes, and donuts.

We ship UPS on Tuesdays, Wednesdays, and Fridays.

Yes, if you order online by Noon you can pick up your order at the bakery the next day, except on Sundays as we are closed on Mondays.
