We deliver fresh baked goodies every Tuesday and Friday around noon.  You can find fresh cookies, quickbreads, cupcakes, tarts, sliced bread, and pizza crusts.  If you miss us on those days, check the freezer section for some freshly frozen products.  We are also happy to take your cake orders and have them delivered to Soergels for pickup as long as it is a delivery day. Soergels also carries every one of our dry mixes.

 We have partnered with Lucci's Pizza (right accross the street and down the block from Gluuteny) to bring fresh, gluten-free pizzas to the community.  You may be thinking, "But Gluuteny, don't you already make your own pizzas?  Why sell the crusts to a competitor right accross the street?" The answer is that our pizzas are also soy free, dairy free, and vegan.  So, if you want a GF pizza with real cheese and all the meaty toppings, Lucci's is the place to go.  They also have a dining area and serve GF beer to go along with your pizza!

We are now working with Wheel Deliver to get our cakes, platters, and other baked goods delivered right to your door.  There is a flat delivery charge of $10.  You can arrange the details and complete the entire transaction over the phone by calling Gluuteny 412-521-4890.  Wheel Deliver only goes to certain areas in the city, so please check with us first to make sure that we can have our goodies delivered to your home!

We are a neat little bakery that squeezed ourselves into a spot in the Squirrel Hill business district back in 2007.  Though we specialize in gluten and casein free foods, we're willing to bet you'd never know by the look, feel, smell, and taste of it!  We consider our baked goods to be some of the best around and offer free samples daily to prove it!  Nothing makes us happier than to see our pastries brighten up the face of someone who just said, "No, that's okay... I don't have to eat this stuff."  Well, Mr. Non-believer, now you do.  Because you can never go back to "regular" brownies after you've had one of ours!

Everything we bake is made in house and from scratch every day.  Our bakers wake up super early to make sure that you are getting the freshest product every time.  If you come in right when we open, it's pretty much a sure bet that something is still hot from the oven.  That said, be sure that you place orders for anything special so we don't run out before you get here (Our bakers also leave super early relative to normal people)!

 Our staff here all works together to make sure that you have a great experience each time you come back.   We love taking special orders, so don't hesitate to call ahead if you need to plan a party or you just want to make sure we don't sell out of the chocolate cream filled cupcakes with chocolate ganache before you get here.  We don't mind going the extra mile if it will make your smile a little brighter, so go ahead and ask for that crispy corner or gooey middle piece of the brownie selection or the sugar cookie with the least or most icing!

Our bakery is alive and growing.  We have kept some of the same menu items that we opened with in 2007, such as moist pumpkin loaf and cinnamon swirl coffee cake,  created variations on some classics, like adding the deluxe brownies and snickerdoodles, updated some recipes to make them better, such as the now chewier chocolate chip cookies, and added some alltogether new products, such as the pizza pockets and peanut-butter cookies.  We will continue to be creative and expand our menu for as long as our delightful customers continue to inspire us!  If you have a great idea for a new item let us know, because after all, we do it all for you.

So if you live out of state, we created  dry baking mixes just for you so that you can have the fresh smell and taste of Gluuteny right in your own kitchen!  Each bag is hand-scooped from the same dry mix we use to bake fresh goodies in house every day. Our Story

How it all got started...

In 2005 one little girl was diagnosed with Autistic Spectrum Disorder and her parents were told there wasn't much they could do. Mom didn't settle for that answer and after painstaking research and consultations, she found that her daughter could benefit from completely changing her diet (gluten and casein free). It wasn't easy and the gf/cf goods on the market tasted nothing like their counterparts. So Mom set to work, baking at home and perfecting breads, cookies, brownies, cakes, and everything else that kids love to eat. They were so good she had to share!

UPDATE: While there is no scientific evidence proving that the gluten and casein free diet benefits ASD, we are happy to announce that in 2008 Ilana had her ASD diagnosis removed and today she is a happy and healthy 9 year old.

jess in pittsburgh magazineGluuteny is currently run by the general manger and resident pastry chef, Jessica Lehman.  Jessica started at Gluuteny as a baker back in 2007, just as the company was getting ready to open its doors for the first time.  She attened PA Culinary, a Le Cordon Bleu school, in 2008, working towards a degree in patisserie.  She then left Gluuteny to complete her externship at the Ritz Carlton's flagship property- The Beach Resort in Naples, Florida.  After completing her externship Jessica graduated as a valedictorian and only recipient of the Brillat Savarin Young Professional Award.  

 Jessica was then offered a full time position at the Ritz, which she accepted.  After 14 months of the beach, Jessica decided to move back to Pittsburgh where once again she met with Mojca and Gluuteny. In 2011 she would rejoin the company, this time as the GM and resident pastry chef.

With the same core values in mind, Jessica has been expanding the company through both the menu offering and reach in the community.  You will now see vegan and nut free options on the menu and find Gluuteny's products all around the city of Pittsburgh.  



 

Allergen Info

All of our products are guaranteed to be gluten-free (wheat-free) and casein-free (dairy-free).   We are a dedicated GF/CF facility which means we do not even bring any gluten or casein-containing products into the building.  Ever.  All of the equipment we use was purchased brand new to ensure that no cross contamination could have occured.  We have been this way since our opening in 2007. FAQ

What is gluten?

Gluten is a protein found in wheat, rye, and barley.


What is casein?

Casein is a milk protein found in all dairy products.

 

Why are you gluten and casein free?

More and more people are finding out that they are either allergic to gluten, gluten intolerant, have celiac disease, or find that they have a condition (such as autism) that can greatly benefit from the gluten and casein free diet.  Read about our story for a great example of this.

 

What does it mean to be gluten free?

We compiled all the information you will need to eat GF in this handy handout!


What do you use instead of wheat flour?

We created our very own flour mixture made up of rice flour, tapioca starch, corn starch, potato starch, and xanthan gum.  The same basic flour ingredients are used in all of our products and you can even buy a bag of it from us here.  We hand scoop every bag and it already has the xanthan gum added (most GF flours require that you purchase that seperately).


What do you use instead of milk, cheese, and butter?

We use almond milk, Daiya brand imitation cheeses, Tofutti brand imitation cream cheese, and margarine.

 

Dairy free... does that mean everything you make is vegan?

No.  We do not and will not ever bring meat or dairy products into the bakery but we do use eggs.  That said, we offer several vegan options such as chocolate cream filled cupcakes, white almond cupcakes, pizza pockets, and breads.  We are always at work trying to make new vegan options, so check back often or sign up for our twitter, facebook, newletter, and blog for constant updates!

 

Do you have anything for diabetics?

We do not specialze in this area, but our breads are low in sugar and we make a completely sugar-free cherry tart that is gently sweetened with agave nectar.

 

What is the carb count or nutritional breakdown?

We have nutrition labels for all of our dry mixes and they can all be viewed in the shopping area of this website.  Unfortunately, we do not have the breakdown yet for any of the fresh product, though we can tell you it is comparable to regular baked goods and breads.  Our flour has a similar carb count to regular flour and our sweets have just as much sugar and fat as a regular bakery's would.

 

Are you a franchise?
